Citrus marinated tofu over brown rice noodles, carrots, edamame & red cabbage with basil, cilantro, jalapeño, peanuts, scallion, sesame seeds & wasabi dressing.

You might remember we used to have a raw pad thai salad in our gourmet to go section a few years ago. Well we took inspiration from that and turned it into a noodle salad with brown rice noodles (gluten-free!), added some more herbs (because you can never have too much), and paired it with a wasabi dressing for an extra kick.

The result is a wonderfully bright and crunchy dish for easy lunch or dinners that will be available daily in our goumet to go fridges starting today (8/20). To add to the excitement, we are craving a warm pad thai bowl too so be on the lookout for that when our autumn specials launch soon!
