Krush in the Kitchen Recipe Roundup: Week 8
This past week on #KrushintheKitchen we made guilt-free versions of a few of our favorite foods. There was a Cilantro Lime Rice that uses cauliflower instead of rice; a Chocolate Mousse that uses avocado instead of cream or dairy; and Cinnamon Roll Bites that have no trace of flour or butter!
The best part about the recipes we showed is that they don’t use any obscure flours or ingredients, but rather, pantry items and staple produce. It shows just how simple it is to make small changes that leave your body feeling better and set you up for a lifetime of wellness. As you learn more substitutions and/or replacements you will build on your mental recipe folder and find yourself cooking like this everyday!

Cilantro Lime Cauliflower Rice
Why we love: Cauliflower is so versatile, high in fiber and in vitamin C. It’s is also high in an essential nutrient called choline. Choline helps reduce anxiety and calm your brain, so it is the perfect vegetable to eat during stressful times.
Serves 4-6
- 1 head cauliflower, broken into very small florets
- 2 tbsp butter
- 1 tbsp olive oil
- 1 bunch cilantro, roughly chopped
- 2 limes, freshly squeezed
- Sea salt
Using a food processor, pulse down cauliflower to small rice sized pieces.
In saucepan on medium heat, melt butter and add olive oil.
Add riced cauliflower, cook for about 5 minutes, moving rice around frequently.
Once rice is the slightest bit browned, turn stove off, add cilantro, freshly squeezed lime, and pinch of sea salt!
Chocolate Mousse
Why we love: Everyone deserves a little decadent chocolate treat right now, and thanks to this recipe you can have exactly that without the guilt! It’s the perfect dessert, afternoon snack or even breakfast. Cacao is high in magnesium which will relax your nervous system, and you will get those healthy fats from the avocado.
Serves 2
- 2 avocados
- 1/4 cup cacao
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 2 tbsp water or nut mylk
- Dash of sea salt
Blend all ingredients on low, stopping occasionally to scrape down the sides and continue blending until combined and fluffy.
Optional toppings: hemp seeds, banana slices, unsweetened coconut shreds
