Our Founding Chef’s Fav Krush Dish
That’s where Jimmy Tchinnis comes in. Longtime friend, chef, restaurant owner, delightfully talented & spirited, Chef Jimmy, jumped on board to craft the OK menu for our first location in Woodbury, NY. For many chefs, developing a 100% organic and healthy menu could appear to be limiting, but Jimmy had a different response. “Cooking with organic food is cooking with the ingredient at its total best. Conventionally grown foods hold onto more water because of the fertilizing process so you are getting a diluted vegetable. Organic veggies have less water in their cells, which leads to more flavor.” Now there’s an incredible fun fact of the day, and a gentle reminder to choose organic always :).
With 25 years of experience at the stove, we wanted to ask Chef Jimmy a few questions.
OK: What’s your favorite Krush dish and why?
Jimmy: My favorite Krush dish is the Austin Chicken. Although it’s a delicious dish, the reason it’s my favorite is because it’s the first recipe/dish I created for Krush. The early days of Krush hold a special place in my heart. A lot of hard work and a lot of fun.
OK: If you were only able to have one kitchen tool, what would it be?
Jimmy: The one kitchen tool I cannot live without is a good sharp knife.
OK: Favorite chef hack?
Jimmy: Take your meat out of the fridge and get it to room temperature before cooking. When it’s done cooking, LET IT REST! Chicken, pork, beef, fish, let them sit for at least 5 minutes before you cut into them. You will have juicer, tastier meat.
OK: Who or what is your culinary inspiration?
Jimmy: My culinary inspiration has always been my mother. She is a great cook and introduced us to flavors from all over the world. She always prepared a wide variety of cuisines for dinner.
