Soup’s On and It’s Powerful
Do you know about our Powerful Greens Soup? It’s been on the menu for 5 years and it’s one of our rockstar daily selections! It’s made with the simplest ingredients (and one mystery ingredient) that pack a powerful punch.
Broccoli: As a powerful cancer-fighting ingredient, we should find as many ways as possible to incorporate broccoli into our diets. Cruciferous vegetables are known for indole-3-carbinol, a powerful antioxidant that has been shown to be very effective against breast, cervical, and prostate cancer. Broccoli should always be sourced organically as its fragile nature absorbs too many pesticides otherwise. In this soup we use the florets and the stems!
Kale: High in vitamin A and vitamin C, this vegetable is at the top of our list for boosting our immune defenses this winter. Cruciferous vegetables, including kale, have been extensively studied for their ability to inhibit the growth of cancer cells in vitro. According to the National Cancer Institute, the secret behind the cancer-killing ability of cruciferous veggies is that they’re rich in glucosinolates, which are a large group of sulfur-containing compounds.
Spinach: Known as one of the best anti-aging foods around, spinach also contains special protective carotenoid compounds that have been linked with decreasing the risk of many diseases, including cancer, heart disease, diabetes, neurodegenerative conditions and obesity. We consume it in our morning smoothies, vegetable sautés and in abundance, with this powerful greens soup!
Veggie Broth: Homemade veggie broth is the best! We use assorted vegetables (not peppers or tomatoes as these can be aggravating to joints) to make our from-scratch broth. It’s hydrating and deeply nourishing to have the combination of so many organic nutrients as part of your soup.
Nutritional Yeast: This “mystery” ingredient is what adds the creamy silky texture to our powerful soup; look for fortified nutritional yeast as it is super high in B vitamins, which support healthy hair, skin and nail growth and is so important for energy levels. We also love that it is known for its hefty antiviral and anti bacterial properties.
