Veggies for Breakfast

I’m not sure why vegetables have never dominated breakfast menus; if you want to take your health up a notch– LOWER SUGAR, ADD FIBER, BALANCE YOUR pH, MAKE YOUR GUT HAPPY so your BRAIN can function at its best– these are all big concepts — but they can be addressed by overloading your life with organic vegetables!

My Favorite breakfasts center around vegetables…… Organic vegetables because I’m always focused on keeping my pesticide load in my body as low as possible.

It’s so simple: Sauteed concoctions of delicious, organic vegetables, topped with things like avocado or hemp seeds, cashews or a fried egg!

The kale detox salad from Krush’s gourmet section  (or simply create it yourself!)  Chickpeas, almonds, grapefruit, cranberries, shredded kale, sauteed in a pan to get it warm; add a fried egg or half an avocado and the dish becomes satiating and complete;

Roasted Vegetables ( zucchini, beets, sweet potatoes, mushrooms, onions..I change it seasonally). again toss in a saute pan and then sprinkle with hemp seeds or cashews; I love this for when I’m committed to vegan eating for a week or two at a time;

Sweet Potato Hash – this is another favorite for me: roasted sweet potatoes with caramelized onions, I add some black beans, and a fresh herb like basil, and suddenly I have a gourmet breakfast that keeps me energized through lunch time.

Does it seem strange to start your day with a bowl full of vegetables? How did English muffins become the standard breakfast food? Could you imagine changing that concept and getting your full days worth of fiber and nutrients before the clock hits noon?!

Wellness in life, and feeling good daily, boil down to small choices all day long!!!  Breakfast is such a perfect time to start the ball rolling with nutrient-dense foods.

Break the Fast.. start your day with 2 or more cups of vegetables and I think you will start to notice a huge difference in your health!
